I have a trick to make more when I roast a chicken (I haven't tried it with turkey due to the size): brine the chicken to keep it moist, take the backbone out to flatten it, make a lot of stuffing and put it in a alumimum foil self-contructed "boat" that has been sprayed with cooking oil on a flat rimmed baking sheet, lay the flattened chicken over the boat so all the stuffing gets some of the good drippings and roast!
