Tiramisu, pronto
A quick, make-it-in-your-sleep deconstruction of tiramisu. This is one dessert I could eat until I burst, so I needed to find a way to have so much and no more.
To wit, a recipe for two persons. Or, one for you and...anotheroneforyou! Yep, there's a way around every resolution.
4 lady fingers
4 tablespoons marscarpone
1 tablespoon powdered sugar
2 tablespoons cognac (or another unsweet spirit of your choice; grappa, for instance)
(And increase incrementally, of course, for more people)
First, make some good espresso. How you do that is up to you. I use an Alessi stovetop espresso maker. This one was loaded with Illy.
In a small bowl stir vigorously the cream, sugar and cognac.
In small glasses arrange two lady fingers, upright. Drizzle some coffee over them - not enough to collapse them, though they do absorb a lot before losing their poise.
Add a dollop of the cream.
That's it.

Sometimes I use fat free creamcheese instead of mascarpone. Sure, not as good as the real stuff but I can eat tons of tiramisu too ;o)
